How to Wake Up Your Dehydrated Starter:
“Miss Kneady Bitch”, has been dehydrated for travel, which means she’s sleeping—not dead, not weak, just waiting for her first snack. Once you add flour and water, she’ll come back to life fast and grow into her own unique culture.
What to do:
- Add 5–20g of dehydrated starter to a clean jar. Store the rest in the freezer as backup.
- Feed using a 1:5:5 ratio (starter : flour : water). This gives her the strength she needs as she wakes up.
- After she peaks, give her a second feeding: discard half, then water + flour in the ratio you want to use. Mark the jar so you can watch her rise.
- Feed her twice a day, always discarding before adding fresh flour and water.
- In 2–3 days, she’ll be bubbly, doubled, and ready to bake.
A fun (and important) note:
Once you start feeding her in your kitchen, she becomes a brand‑new culture—Miss Kneady Bitch’s daughter. That means she needs a new name. Choose something sweet, sassy, dramatic, or chaotic. She’ll earn it. Give her love, watch her, and she’ll give you back delicious tangy treats.
How to keep her alive:
– Feed equal parts flour and water.
– Room temp = feed daily.
– Fridge = feed weekly.
– If she gets dramatic and forms hooch (liquid on top), stir it in and then feed her.
How to bake with her:
Use her when she’s at peak activity — bubbly, domed, and smelling tangy‑sweet.
Troubleshooting
– Flat or sleepy? She’s hungry — feed her.
– Sharp smell? Normal. She’s just feeling spicy.
– Liquid on top? Stir it in and then feed.
– Pink or fuzzy? Toss and replace — she’s not supposed to grow fur!
